Harvest Date: 23rd March 2008, 3rd April 2008
Alcohol: 13.5 %
Residual Sugar: <1 g/L
Titratable Acidity: 5.3 g/L
Tasting Notes: Mid ruby in colour. The nose is complex showing ripe dark fruits, prunes, plums, dark cherries accented by a smoky lift from barrel fermentation. The palate is soft and generous with ripe, sweet, dark fruit characters filling the mouth. The tannins are supple and finely grained giving depth and length to the mouth-feel. Soft acidity and good fruit weight make this wine suitable for early drinking while retaining enough structure for mid-term cellaring.
Cellaring: Cellaring potential 3 to 5 years, best to drink 2009 to 2014.
Food Accompaniments: A wine to enjoy with game, lamb and poultry dishes, Italian style food and vegetarian cuisine
Viticulture: Hand harvested from the company owned
Winemaking: Destemmed without crushing and gravity fed into open topped, hand plunged fermenters. Cold soak for 7 days, wild fermentation 7 days, 7 days post ferment maceration. A small portion was drained off skin after 10 days to complete fermentation and maturation for 10 months in Burgundian coopered barriques.
